MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Brunswick Stew Categories: Stew Yield: 8 Servings 6 tb Butter 1 1/2 c Onion; chopped 3 cl Garlic (1 tb); up to 4 cl, - minced 3 c Potatoes; diced 1 1/2 c Frozen baby lima beans 2 c Frozen corn kernels 3 c Chicken stock 14 1/2 oz Can diced tomatoes 1 1/2 c BBQ sauce 1 tb Worcestershire sauce 2 tb Brown sugar; packed - (optional) 1 ts Salt 1/2 ts Freshly ground black pepper 1/4 ts Ground cayenne pepper; up to - 1/2 ts 2 c Chicken thighs; cooked, - chopped or shredded 2 c Pork shoulder; cooked, - shredded -OR- 2 c Leftover pulled pork Cornbread or biscuits; for - serving (optional) Coleslaw; for serving - (optional) Preparation time: 15 minutes Cooking time: 45 minutes Total time: 60 minutes Gather the ingredients. Melt the butter in a large Dutch oven over medium heat. Add the onion and cook, stirring frequently, until the onion is translucent. Add the garlic and cook, stirring for 2 minutes longer. Add the potatoes, lima beans, corn, chicken stock, and tomatoes. Bring to a boil. Cover, reduce heat, and simmer for about 25 minutes, or until the vegetables are tender. Add the barbecue sauce, Worcestershire sauce, brown sugar, if using, salt, black pepper, cayenne, chicken, and pork. Mix well to combine. Simmer, uncovered, for 15 minutes. Serve with cornbread or biscuits, along with coleslaw on the side. Tips: If using prepared pulled pork with barbecue sauce, use about 1 to 1-1/4 cups of barbecue sauce instead of the full amount. If you don't have all of the ingredients called for in this recipe, you can eliminate some or substitute.
