* Exported from MasterCook * Brunswick Stew #1 Recipe By : Williamsburg: Art of Cookery Serving Size : 1 Preparation Time :0:00 Categories : Stews Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 lb Chicken 3 qt Water 1 lg Onion 1/2 lb Lean ham -- in small piece 2 pt Tomatoes 1 pt Lima beans 4 lg Irish potatoes -- dice 1 pt Corn -- grated 1 tb Salt 1/4 ts Pepper 1 Red pepper 3 oz Butter Cut up 1 lb chicken and put it in a large pan with 3 qt water, one large onion, 1/2 lb lean ham cut into small pieces, and simmer gently for 2 hours. Add 3 pt tomatoes, 1 pt oflima beans, 4 large Irish potatoes diced, 1 pt grated corn, 1 tb salt, 1/4 ts pepper, a small pod of red pepper. Cover and simmer gently for another 1 hour stirring frequently to prevent scorching. Add 3 oz butter and serve hot. Note: This makes a lot of stew.
