MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Boy Scout Stew Categories: Beef, Vegetables, Beans, Chilies, Herbs Yield: 10 Servings 2 tb Olive oil 1 lb Ground beef 2 c Onion; in large pieces (1 - large onion) 1 lb Potatoes; peeled, in 1" pcs 14 1/2 oz Can beef stock 29 oz Diced tomatoes (2 cans) 17 oz Bush's baked beans (2 cans) * 22 1/2 oz Can Bush's steakhouse - grillin' beans * 15 1/2 oz Can pinto beans; rinsed, - drained 14 1/2 oz Can corn niblets; drained 1 ts Ground cumin 1 ts Chilli spice mix 1 ts Kosher salt 1/2 ts Fresh ground black pepper; - more to taste 1/2 ts Garlic powder -OR- 1 ts Garlic granules 1/4 ts Ground cayenne Set oven @ 375 F/190 C. * In a medium to large heavy bottomed pan or Dutch oven, over medium heat, add olive oil and once hot add the beef and onions. Break up the beef and cook until browned. Add all other ingredients and bring to a simmer, cover and place in the oven for 30 minutes or until potatoes are tender.
