MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Chicken And Black Bean Chili Categories: Chili Yield: 6 Servings 2 tb Cooking oil 3 lg Chicken breast halves; - skinless, boneless, - cubed 1" Sea salt; to taste 1 tb Chili powder; to taste 1/2 tb Ground cumin; or to taste 1 Dried chipotle chili pepper; - ground into powder Black pepper; ground, - to taste 1/2 tb Ground cayenne pepper 1 sm Yellow onion; diced 1 md Green bell pepper; diced 1 md Yellow bell pepper; diced 5 c Water 15 oz Can kidney beans; undrained 15 oz Can black beans; undrained 11 oz Can whole kernel corn; - drained 1 tb Green pepper sauce; such as - Tabasco 6 oz Can roasted garlic paste 1 bn Fresh cilantro; chopped Heat oil in large pot over medium heat. Place chicken in pot and brown on all sides. Season with sea salt, chili powder, cumin, ground chipotle, black pepper, and cayenne pepper. Mix in onion, green bell pepper, and yellow bell pepper. Pour in about 3 cups of water; cook 10 minutes, until about half the water has evaporated. Add the beans and corn; season with green pepper sauce. Reduce heat to low; mix in remaining 2 cups of water and tomato paste. Simmer, stirring occasionally, until thickened, 30 minutes. Top with cilantro to serve.
