MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Bean & Beef Slow-Cooked Chilli Categories: Beef, Vegetables, Beans, Herbs, Chilies Yield: 6 servings 1 lb 90% lean ground beef 1 lg Sweet onion; chopped 3 cl Garlic; minced 29 oz Diced tomatoes (2 cans) - with diced green chilies 30 oz Pinto beans (2 cans); rinsed - drained 30 oz Black beans (2 cans); rinsed - drained 3 tb Chilli spice mix 2 ts Ground cumin 1/2 ts Salt MMMMM---------------------OPTIONAL TOPPINGS-------------------------- Sour cream Red onion; chopped Fresh cilantro; minced In a large skillet, cook beef, onion and garlic over medium heat 6-8 minutes or until beef is no longer pink, breaking beef into crumbles; drain. Transfer beef mixture to a 5 qt slow cooker. Drain 1 can of tomatoes, discarding liquid; add to slow cooker. Stir in beans, chilli spice, cumin, salt and remaining tomatoes. Cook, covered, on low 6-8 hours to allow flavors to blend. Mash beans to desired consistency. Serve with toppings as desired.
