  To make vanilla sugar; Flatten 4 plump, moist vanilla beans. Cut
  lengthwise and scrap out the seeds, which you can use in other
  recipes. Put the pods in a jar, fill with sugar and seal. Store for
  several weeks until the sugar has absorbed the vanilla. Use vanilla
  sugar in coffee, desserts and on candy.
