* Exported from MasterCook * Zucchini Relish Recipe By : Judy Ryder Original Serving Size : 6 Preparation Time :0:00 Categories : Relishes Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 10 c Zucchini -- chopped fine 5 md Onions -- chopped fine 1 c Green peppers -- chopped fine 1 c Red peppers -- chopped fine 2 lg Ripe tomatoes -- chopped fine 3 lg Celery ribs (2 c) -- - chopped fine 1/2 c Salt 2 1/2 ts Celery seed 2 1/2 ts Black pepper 1 tb Corn starch 1 1/2 ts Dry mustard 1 ts Turmeric 1 ts Nutmeg 5 c Sugar 2 1/2 c White vinegar Chop the first 6 ingredients. Mix the first 6 ingredients (remove seeds if you like) and add 1/2 cup salt; cover. Let stand overnight. Drain and rinse with cold water; drain again. Add other ingredients and mix well. Cook 45 minutes, simmering and stirring. Ladel into hot jars. Seal and process in boiling water bath 10 minutes. Yield: 6 Pints Busted by: Judy R.
