Cook over low heat until apples are soft. In a double boiler or heavy saucepan, cook sour cream, eggs, and other 1/2 cup of sugar. Stir constantly until thickened. Remove from heat and stir in vanilla and nutmeg. Carefully stir in apples. Butter and 8-inch pan. Reserve 1/3 cup graham cracker crumbs. Sprinkle remaining crumbs in bottom of pan. Press down. Spoon the apple mixture onto the crumbs. Sprinkle remaining crumbs in bottom of pan. Press down. Spoon the apple mixture onto the crumbs, and sprinkle the top with reserved crumbs.
