* Exported from MasterCook * Mango Pudding LF Recipe By : Roberta Bell (Indiana) Serving Size : 2 Preparation Time :1:10 Categories : Tofu Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 mango -- pulp only (about 2/3 cup) 6 tablespoons fresh orange juice -- (from one) 2 tablespoons fresh lime juice -- (from one) 5 ounces Tofu Mori-nu soft 3 tablespoons light brown sugar Toss in a blender and puree. Reviewed on eat-lf Erica 18 May 1997: "I made the mango pudding (with tofu) that was just posted to the list - it was terrific! I used brown sugar instead of white, otherwise, pretty much according to recipe. It was a little loose but within 'pudding parameters'. Served it to guests too, they were a little surprised it was tofu. I'm glad it's mango season in Houston." MC estimates with brown sugar 155 cals, 2.1 g fat, 11.4% CFF I hope it's low fat enough. I don't have any of the software products, but I figured since the tofu is the low fat variety it almost surely is. If anyone could calcuate the nutrition info, I'd love to see it.
