* Exported from MasterCook * Citrus Bread Pudding Recipe By : Serving Size : 6 Preparation Time :0:00 Categories : Puddings Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 3/4 c Nonfat milk 6 tb Egg substitute -- (equivalent to - 11 to 12 eggs) 6 tb Sugar 2 ts Vanilla 1 ts Orange zest -- grated 1 ts Lemon zest -- grated 1/2 ts Cinnamon 5 c French bread cubes (3/4") -- - soft 4 1/2 oz Prunes -- pitted, diced 1 tb Margarine -- melted Citrus sauce -- (recipe follows) In large bowl whisk milk, egg substitute, sugar, vanilla, citrus zest, and cinnamon; stir in bread and prunes. Let stand at room temperature 45 minutes. Preheat oven to 350 F. Stir margarine into bread mixture; spoon into 8" square baking dish coated with vegetable cooking spray. Bake at 45 minutes or until pick inserted into center comes out clean. Serve warm or at room temperature with warm Citrus Sauce.
