In frying pan, combine berries, sugar, nutmeg, lemon zest, and 1/3 cup water. Cook over medium heat until fruit is soft but still intact, 8 to 10 minutes. Take from heat, let cool and remove lemon zest. Drain fruit, reserving juice. Line 5 cup bowl with plastic wrap. Trim crusts from bread. Dip one side of each bread slice in juice and line bottom and sides of prepared bowl, moistened side toward bowl. Cut bread as needed to fit. Pour in fruit. Top with remaining bread, trimming to fit. Brush remaining juice over bread. Cover with plastic wrap and put a plate on top that fits into bowl. Add a weight, such as a 28 oz can and refrigerate overnight.
