* Exported from MasterCook * Pineapple Bread Pudding Recipe By : Serving Size : 6 Preparation Time :0:00 Categories : Desserts Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1/2 c Butter -- softened 1 c Sugar 1/2 ts Ground cinnamon 4 Eggs 13 1/4 oz Can crushed pineapple 2 c Bread cubes (1/2") 1/4 c Pecans -- chopped Carmel Fluff: 2 c Whipping cream -- chilled 3/4 c Brown sugar -- packed 1 ts Vanilla Heat oven to 325 degrees F. Beat butter, sugar and cinnamon in large mixer bowl on medium speed, scraping bowl constantly, 1 minute. Add eggs; beat on high speed, scraping bowl occasionally, until mixture is light and fluffy, about 2 minutes. Fold in pineapple, bread cubes, and pecans. Pour into buttered 1-1/2 qt casserole dish. Bake until knife inserted in center comes out clean, 40 to 45 minutes. Serve with Carmal Fluff if desired. Makes 4 to 6 servings. Carmel Fluff: Beat chilled whipping cream, brown sugar and vanilla in chilled bowl until stiff.
