* Exported from MasterCook * Tomato Preserves Recipe By : Serving Size : 1 Preparation Time :0:00 Categories : Tomatoes Vegetables Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 Lb. firm -- small, yellow or red tomatoes (about 10 or 12) 3/4 C. water 1/4 lemon -- thinly sliced 1 Piece fresh -- (about 1/2-inch) ginger root or 1/8 tsp. powdered ginger 1 2/3 C. sugar If tomatoes are quite ripe, remove the skins. (Skins become tougher as tomatoes ripen.) Dip tomatoes into boiling water, then into cold water to loosen skins. Boil lemon for 5 minutes in 1/4 cup water. Make a syrup with the remaining 1/2 cup water and the sugar. Simmer 5 minutes. To the syrup, add the tomatoes, ginger, lemon and liquid in which the lemon was cooked. Boil until tomatoes are clear and syrup is thickened slightly. Remove foam. Ladle hot tomatoes into hot jars. Adjust lids. Process 20 minutes in a simmering water bath.
