In stir-fries, mix 1 part chili oil with every 3 parts of the peanut
oil or vegetable oil usually used. In Szechwan chicken and fish
dishes that call for a sprinkle of sesame oil at the end, try 2 parts
sesame oil with 1 part chili oil.
