* Exported from MasterCook * Ginger Limeade Recipe By : John Willoughby and Chris Schlesinger Serving Size : 4 Preparation Time :0:00 Categories : Ginger Limes Beverages Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 cup sugar 2 cups tap water OR bottled water 1 piece ginger about the size an index finger -- cut into thick slices 1 1/4 cups fresh lime juice from ten limes -- approximately 16 ounces carbonated water -- approximately mint sprigs -- optional garnish In a small saucepan, combine the sugar and l/2 cup of the water, and bring to a boil, stirring frequently over high heat. Allow to boil for 1 minute to dissolve the sugar: then remove from heat pour into a pitcher and allow to cool. In the same saucepan, combine the remaining 1+1/2 cups of water and the ginger, and bring to a boil over high heat. Reduce the heat to low, and simmer for 20 minutes. Remove from heat, add to the sugar syrup and allow to cool. While the ginger is simmering, juice the limes. When the sugar and ginger mixture is at room temperature, add the lime juice and mix well. Fill 4 glasses with crushed ice. Add enough of the lime juice mixture to half fill the glasses, then fill to the top with carbonated water. Serve garnished with a mint sprig if desired. Makes 4 drinks.
