                         Cheesy Lemon Spread (EB)

   2                    Eggs -- slightly beaten
     1/4  c             Lemon juice
   3      tb            Butter
     3/4  c             Sugar
   1      ts            Lemon zest -- fresh grated
   1      ds            Salt
   3      oz            Cream cheese

In a heavy pan mix eggs, juice, butter, sugar, and salt. Bring to a
boil while stirring over low heat, then cook 3 more minutes. Beat
cream cheese and lemon peel. When egg mixture is cool, blend into
cheese until smooth. Store in refrigerator.
