* Exported from MasterCook * Hummous Recipe By : Moosewood Cookbook Serving Size : 1 Preparation Time :0:00 Categories : Appetizers Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 3 cl Garlic -- sliced 1 lg Handful parsley 2 md Scallions -- in 1" pieces 3 c Cooked chickpeas 6 tb Tahini 6 tb Fresh lemon juice 1 ts Salt -- to taste Cayenne -- to taste (optional) Cumin -- to taste (optional) Place garlic, parsley, and scallions in a food processor or blender and mince. Add chick peas, tahini, lemon juice, and salt, and puree to a thick paste. (You can also do the mincing and mashing by hand. The hummus will have a coarser texture, but that can be nice too.)
