* Exported from MasterCook * Crunchy Hot Crab Bites Recipe By : Hotter Than Hell by Jane Butler Serving Size : 16 Preparation Time :0:00 Categories : Appetizers Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 1/2 c Crab meat -- drained, - all bits of shell removed 1 tb Fresh lime or lemon juice 1/2 ts Lime peel -- grated 1 Green onion -- minced 2 tb Parsley -- minced 1 ts Worcestershire sauce 1 ts Hot prepared mustard -- - or to taste Hot sauce -- to taste 2 tb Unsalted butter -- melted 16 Melba toast rounds 1/2 c Swiss or sharp Cheddar -- - grated Simple to prepare and serve. If you like, use tuna, small cooked shrimp or even deviled ham in place of the crab. Preheat broiler. Combine crab, lime or lemon juice, lime peel, green onion, parsley, Worcestershire sauce, mustard, and hot-pepper sauce. Taste and adjust seasonings. Brush melted butter on toast rounds and arrange in a single layerin a broiler pan. Top each round with a portion of the crab mixture, then with 1-1/2 ts cheese.
