MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Seafood Stuffed Eggs Categories: Appetizers Yield: 8 Servings 8 Eggs; boiled, - halved lengthwise 3/4 c Evaporated milk 1 tb Lemon juice; +1 ts, divided 1/4 ts Ground white pepper 1/4 lb Seafood (fish, crab, - shrimp); - cooked, minced, chilled 1/2 c Cucumber; minced 1/4 c Celery; minced 1/4 c Plain yogurt 1/4 ts Lemon zest; grated 1/4 ts Salt 1/4 ts Pepper In medium bowl sieve egg yolks, add milk, 1 tb lemon juice, and white pepper. Mix well and pass through sieve until smooth. Cover and chill. In another bowl combine remaining ingredients except hard boiled egg whites. Evenly divide mixture to fill each egg white.
