Blend well. Cut in shortening by hand or with a heavy-duty mixer until the mixture resembles corn meal in texture. Put into an airtight container; label with date and contents. Store in a cool, dry place. Use within 10 to 12 weeks. Yield: 13 Cups Variation: Use 4-1/4 cups unbleached flour and 4-1/4 cups whole wheat flour.
