  To Substitute For:

  1 oz Unsweetened chocolate, use:
  -   3 tb Unsweetened cocoa and
  -   1 tb Shortening

  1 oz Semisweet chocolate, use:
  -   3 tb Semisweet chocolate chips -OR-
  -   1 oz Unsweetened chocolate and
  -   1 tb Sugar

  6 oz Semisweet chocolate chips
  - (1 c), use:
  -   6 tb Unsweetened cocoa,
  - 1/4 c  Sugar, and
  - 1/4 c  Shortening

  4 oz Sweet baking chocolate, use:
  - 1/4 c  Unsweetened cocoa
  - 1/3 c  Sugar, and
  -   3 tb Shortening

  Note:

  When melted, semisweet chocolate morsels and semisweet chocolate
  squares can be used interchangeably.
