Stir in green peppers, eggplants, garlic, and onions. Cook over low heat until they begin to brown. Stir in tomato sauce, salt, ground pepper, and brown sugar. Cook slowly until eggplant is tender. Chill quickly and freeze in portions suitable for your family. To Serve: Defrost and add 1/4 cup grated parmesan cheese for every 4 servings. Heat through for about 15 minutes.
