MMMMM----   Recipe via Meal-Master (tm) v8.06

      Title: Lee's Famous Chicken
 Categories: Poultry, Vegetables, Rice, Copycat
      Yield: 2 Servings

      1 lb Chicken breast;
           - in small pieces
      1 c  Onion; diced
      1 c  Celery; diced
      1 c  Carrot; diced
      1 c  Uncooked white rice
      2 tb Olive oil

  Heat the olive oil in a skillet/wok over medium heat.

  Add the chicken, onion, celery, and carrot. cook for 5 to
  7 minutes, or until the chicken is cooked through.

  Add the uncooked white rice and stir to combine.

  Continue cooking for 5 to 7 minutes, or until the rice is cooked.

  Serve hot and enjoy!

  UDD Notes:

  I certainly have never seen this on a Lee's Famous menu. It is
  good. But, it's not from any Lee's Famous Chicken location I have
  ever visited. Perhaps a similarly named place owned by Asians
  exists outside of my range of territory.
