Place all the ingredients in a small spot, together with 1-1/2 cup of water. Place the heat on medium-high and bring to a boil, stirring frequently to avoid clumping. Cook until the sauce begins to thicken, about 3 more minutes. Pour into an airtight container and store in the refrigerator. Your vegan pumpkin spice syrup should last about 7 to 10 days.
