Dry is just as easy and doesn't prune up your hands. Uncooked tastes like raw, past maturity lima beans - not my favorite taste sensation. A little bitter. Boiled for a minute with a little butter. Tastes like a cross between peas and asparagus. Very tasty. Texture is like peas. Boiled then lightly fried in a little butter, garlic powder and just a pinch of salt. It was ok but seemed to be missing something. Boiled was better. Boiled then roasted in oven until crispy/crunchy. Very good. Makes a good tasty addition to salad. Seems to store well. Downside. It takes a LOT of seedlings to make a handful of seeds. It took two people (me and my 11 year old daughter) about 45-60 minutes to de-wing 1 cup of seeds.
