MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Meaty Sloppy Joe Pockets Categories: Beef, Sandwiches Yield: 8 Servings 1 lb Ground beef (90%/10%) 1/4 c Onion; finely chopped 1/4 c Celery; finely chopped 1/4 c Carrot; shredded 8 oz Can tomato sauce 1/4 c Ketchup 2 tb Brown sugar 1 tb Red wine vinegar 1 tb Worcestershire sauce 1 tb Tomato paste 16.3 oz Can large refrigerated - buttermilk biscuits 1/2 c Cheddar cheese; shredded - (optional) In a large skillet, cook beef, onion, celery, and carrot over medium heat 6 to 8 minutes or until beef is no longer pink and vegetables are tender, breaking up beef into crumbles; drain. Stir in tomato sauce, ketchup, brown sugar, vinegar, Worcestershire sauce, and tomato paste. Bring to a boil. Reduce heat; simmer, uncovered, 10 to 15 minutes or until thickened, stirring occasionally. Cool completely. Seat oven @ 350 F/175 C. On a lightly floured surface, pat or roll each biscuit into a 6" circle. Spoon scant 1/3 cup beef mixture over half of each circle to within 1/2" of edge. If desired, sprinkle with cheese. Fold dough over filling; press edge with a fork to seal. Place on an ungreased baking sheet. Cut three slits in top of each. Bake 18 to 20 minutes or until golden brown.
