MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Lisa's All-Day Sugar & Salt Pork Roast Categories: Pork, Herbs, Breads Yield: 12 Servings 1 c Sea salt; +1 tb, divided 1 c Sugar 7 lb Bone-in pork butt roast 1/4 c Barbecue seasoning 1/2 ts Pepper 1/2 c Brown sugar; packed 12 Hamburger buns or kaiser - rolls; split Combine 1 cup sea salt and sugar; rub onto all sides of roast. Place in a shallow dish; refrigerate, covered, overnight. Set oven @ 300 F/150 C. Using a kitchen knife, scrape salt and sugar coating from roast; discard any accumulated juices. Transfer pork to a large shallow roasting pan. Rub with barbecue seasoning; sprinkle with pepper. Roast until tender, 6 to 8 hours. Increase oven temperature to 500 F/260 C. Combine brown sugar and remaining 1 tb sea salt; sprinkle over cooked pork. Return pork to oven and roast until a crisp crust forms, 10 to 15 minutes. Remove; when cool enough to handle, shred meat with 2 forks. Serve warm on buns or rolls.
