* Exported from MasterCook * Grilled Portabella Chevre And Arugula Sandwiches Recipe By : http://www.jec.edu/ktv Serving Size : 2 Preparation Time :0:00 Categories : Sandwiches Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 tb Olive oil 2 cl Garlic -- crushed 2 lg Portabella mushrooms 2 sl Red onion -- thick 4 sl Crusty rustic style bread -- - thick 4 oz Chevre (goat cheese) 2 tb Roasted garlic mayonnaise Fresh arugula leaves or lettuce Salt Pepper -- freshly ground Mix olive oil with crushed garlic until smooth. Brush mushrooms and red onion with olive oil mix. Grill on both sides until done--about 5 minutes per side. Salt & pepper to taste. Grill bread on both sides. Spread one piece with mayonnaise and the other with chevre. Fill with mushroom, onion slices, and arugula.
