MMMMM----- Recipe via Meal-Master (tm) v8.05 Title: Madras Chicken Buns Categories: Chicken, Leftover, Sandwich, Boat Yield: 1 Servings 1/4 c Lowfat sour cream * 2 tb Mango chutney 1 tb Butter 1/2 Onion; finely chopped 1/2 Bell pepper; chopped 1/2 c Celery; diced 1 Granny Smith apple; chopped 3/4 ts Curry powder 2 c Cooked chicken breast 4 Hamburger buns * For lower fat use nonfat yogurt. In a small bowl, combine sour cream and chutney until well blended; set aside. In a skillet, melt butter over medium heat. Add onion, bell pepper, celery, and apple; cook until onion is soft but not browned. Stir in curry powder; cook 1 minute. Add chicken; cook for 3 minutes or until heated through. Stir in sour cream mix; cook for 1 minute. Remove skillet from heat; keep warm. Toast buns. Spoon 1/2 cup mixture over bottom of bun, cover with top of bun.
