MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Pizza Alfredo Categories: Pizza, Vegetarian Yield: 4 Servings MMMMM---------------------------DOUGH-------------------------------- 1 c Water; warm 1 tb Dry baker's yeast (1 pkg) 1 ts Honey 1 tb Sunflower oil 1/2 ts Salt 1 1/2 c Whole wheat flour 1 1/2 c Unbleached white flour 1 c Fresh raw spinach; chopped 2 ts Corn meal MMMMM---------------------------SAUCE-------------------------------- 2 tb Butter 2 tb Unbleached white flour 1 1/2 c Heavy cream 1 c Parmesan cheese; - finely grated 1/2 c Milk 2 tb Fresh parsley; minced MMMMM--------------------------TOPPING------------------------------- 1/2 c Parmesan cheese; - finely grated 1 1/2 c Mushrooms; sliced 1 c Artichoke hearts; sliced 1 c Mozzarella cheese; grated Every Tuesday night is pizza night at the cafe and we always serve a special pizza. On holidays like the Fourth of July, Election Day, and Christmas, the crew becomes quite creative with its pizza special. On the Fourth of July, a red, white, and blue pizza was served with red peppers, mozzarella, and bleu cheese on top of a tomato sauce pie. On Election Day, a "Green Party" pizza was the special with fresh spinach in the dough and a zucchini-cheese topping. During the Christmas holidays, the pizza had red and green peppers on top. This pizza has no theme to it, but the delicious rich sauce makes it a favorite special at the cafe. Mix together all dough ingredients except flour, spinach, and corn meal, and let sit 5 minutes until bubbly. Add flours, first combining them, reserving 1/4 cup white flour for rolling out dough. Knead in spinach on floured board. Place in a bowl, covered, and allow to sit in a warm place 1 hour, until doubled in size. Preheat oven to 450 F. Knead again on floured board until dough is smooth. Roll out to desired size for a 15" round or a 12x14" rectangular pan. Roll dough just slightly larger than pan to allow for an edge to be tucked over around perimeter of pan. Place dough onto oiled pan, first sprinkling bottom of pan with corn meal. Bake 5 to 7 minutes, until crust is firm and just barely begins to brown. Prepare sauce. Melt butter in saucepan on low heat. When melted, add flour, stir, and cook 1 minute, then slowly pour in cream. Stir in Parmesan cheese, then milk and parsley. Remove from heat after cheese has melted. Pour sauce into center of pizza and spread to edges. Sprinkle Parmesan cheese over the sauce, then mushrooms and artichoke hearts. Spread mozzarella over vegetables. Bake 10 minutes more until pizza is bubbly and cheese is just beginning to brown. Recipe by Horn of the Moon Cookbook by Ginny Callan MMMMM
