* Exported from MasterCook * Artichoke, Tomato And Three Cheese Pizza (ADA) Recipe By : American Dairy Association newsletter, Aug 24, 1998 Serving Size : 8 Preparation Time :1:00 Categories : Breads Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 12 oz Roma tomatoes -- - seeded & chopped 1/2 ts Salt -- divided 4 oz Ricotta cheese 2 oz Asiago cheese -- - coarsely grated, divided use 2 tb Fresh basil -- chopped -OR- 1 tb Dried basil 1/4 ts Black pepper -- freshly ground 1 lb Pizza dough -- thawed if frozen 2 ts Basil-flavored olive oil or - unflavored olive oil -- - divided 5 oz Mozzarella cheese -- - cut in small cubes 6 oz Marinated artichoke hearts -- - drained Preparation time: 30 minutes Cooking time: 20 to 25 minutes In a stainless-steel strainer, combine the chopped tomatoes and 1/4 ts salt. Set aside 30 minutes to drain excess liquid. Preheat oven to 425 F Fahrenheit. In a small bowl, stir together the ricotta cheese, 1/4 cup Asiago, basil, remaining 1/4 ts salt and pepper. Roll out or stretch pizza dough to fit a 12" round pizza pan. Drizzle 1 ts basil oil over the dough and spread evenly with the ricotta mixture. Scatter half the tomatoes and half the mozzarella over the ricotta. Arrange the artichoke hearts on the pizza and scatter with the remaining tomatoes and mozzarella. Drizzle with the remaining 1 ts basil olive oil. Bake pizza 15 minutes. Sprinkle with remaining 1/4 cup Asiago and return to oven for 5 to 10 minutes until crust is golden brown and cheeses are melted.
