* Exported from MasterCook * Pasta With Grilled Poultry Sausages (Mf) Recipe By : Cooking Monday To Friday Show # MF6698 Serving Size : 4 Preparation Time :0:00 Categories : Pasta Sausage Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1/2 lb Ziti 4 Tomatoes -- seeded, diced 1/2" 7 oz Pimientoes -- finely sliced -OR- 7 oz Roasted red peppers 1/4 c Olive oil 1/2 ts Saffron threads -- dissolved in: 2 tb Sherry wine vinegar 1 lb Spicy chicken or - turkey sausages -- pricked Salt Black pepper -- freshly ground 2 Scallions -- green parts only, - thinly slice Cook the pasta in 2 qt salted water. Set the tomatoes and peppers in the bottom of a mixing bowl with the olive oil and saffron vinegar. On a lightly oiled stovetop grill cook the sausages until they are done, about 6 or 7 minutes a side. Cut them into thin slices and add to the tomatoes and peppers. When the pasta is done, drain it and toss with the sausages, tomatoes, and peppers. Season and garnish with scallions.
