---------- Recipe via Meal-Master (tm) v8.05 Title: Fettuccine with Spinach, Tomatoes and Garlic Categories: Italian Yield: 6 Servings 1/4 c Extra virgin olive oil 4 cl Garlic; minced 1 sm Onion; sliced very thin 1 bn Fresh spinach; cleaned and - stemmed 1 c Fresh roma tomatoes or - canned Italian tomatoes Splash of white wine 1 ts Sugar Salt and cayenne pepper; - to taste 1 lb Fresh fettuccine; cooked - al dente and drained Heat oil and saute garlic and onion. Add spinach and wilt. Toss in tomatoes and wine, stir for a few minutes to warm, then season with sugar, salt, and cayenne pepper. Toss with fettuccine and serve with cheese.
