MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Stir-Fried Scallops Categories: Seafood, Vegetables, Citrus Yield: 2 servings 1 sm Onion; chopped 3 cl Garlic; minced 1 tb Olive oil 3/4 lb Sea scallops; halved 2 md Plum tomatoes; chopped 2 tb Lemon juice 1/8 ts Pepper Hot cooked rice or pasta - (optional) In a nonstick skillet or wok, stir-fry onion and garlic in hot oil until tender. Add scallops; stir-fry until scallops turn opaque. Add tomatoes; cook and stir until heated through, 1-2 minutes longer. Stir in lemon juice and pepper.
