MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Lemon-Parsley Baked Cod Categories: Seafood, Citrus, Herbs Yield: 4 Servings 3 tb Lemon juice 3 tb Butter; melted 1/4 c A-P flour 1/2 ts Salt 1/4 ts Paprika 1/4 ts Lemon-pepper seasoning 4 Cod fillets (6 oz ea) 2 tb Fresh parsley; minced 2 ts Lemon zest; grated Set oven @ 400 F/205 C. In a shallow bowl, mix lemon juice and butter. In a separate shallow bowl, mix flour and seasonings. Dip fillets in lemon juice mixture, then in flour mixture to coat both sides; shake off excess. Place in a 13x9" baking dish coated with cooking spray. Drizzle with remaining lemon juice mixture. Bake 12 to 15 minutes or until fish just begins to flake easily with a fork.
