MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Crispy Beer-Battered Fish Categories: Seafod, Beer, Herbs, Chilies, Breads Yield: 4 servings 1/2 c Corn starch 1 1/2 ts Baking powder 3/4 ts Salt 1/2 ts Creole seasoning 1/4 ts Paprika 1/4 ts Cayenne pepper 1 c A-P flour; divided 1/2 c Milk 1/3 c Beer 2 c Unsalted top saltines; - crushed 4 Cod fillets (6 oz ea) Oil for deep-fat frying In a shallow bowl, combine the corn starch, baking powder, salt, Creole seasoning, paprika, cayenne and 1/2 cup flour. Stir in milk and beer until smooth. Place crackers and remaining flour in separate shallow bowls. Coat fillets with flour, then dip in batter and coat with crackers. In an electric skillet or deep-fat fryer, heat oil to 375 F/190 C. Fry fish in batches for 2-3 minutes on each side or until golden brown. Drain on paper towels.
