* Exported from MasterCook * Turkey Enchiladas Recipe By : Rival's Crock-Pot Slow Cooker Cuisine; 1995 Serving Size : 1 Preparation Time :0:00 Categories : Poultry Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 10 1/2 oz Can enchilada sauce 15 1/2 oz Can dark red kidney beans 8 Corn tortillas (6") 1 c Turkey -- cooked, shredded 1 c Taco-flavored cheese -- shredded Place foil handles in Crock-Pot. Place 1 corn tortilla in bottom of Crock-Pot. Spoon small amount of enchilada sauce, beans, turkey, and cheese over tortilla. Continue layering process until tortillas are gone. Make sure that last layer is the cheese layer. Cook on Low 6 to 8 hours or on High 3 to 4 hours.
