MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Chicken Riggies Categories: Chicken, Cheese, Pasta, Chilies, Pickles Yield: 6 Servings 1/4 lb Margarine (not butter); - Melted 1 Onion; minced 3 cl Garlic; minced 20 oz Jar of sweet peppers (slice - and seed) 3 Sliced hot cherry peppers - (jarred ones with oil) 1 c Parmesan cheese 2 lb Boneless chicken breast; - cubed 10 oz Chicken broth 15 oz Tomato sauce 1/2 pt Cream 1 sm Can sliced black olives 1 1/2 lb Rigatoni pasta Chicken riggies is an Ital-American pasta dish from the Utica-Rome area of New York State. It is a pasta based dish made with chicken, rigatoni, and hot or sweet peppers in a spicy cream and tomato sauce. It is important to use jarred peppers; the flavor of fresh peppers completely changes the recipe. Saute onion, garlic, and peppers in the margarine slowly over medium low heat until the onions are clear. Add the Parmesan, chicken breast, chicken stock, tomato sauce, cream, and olives.
