* Exported from MasterCook * Mexican Chicken and Rice Recipe By : Carolee Serving Size : 1 Preparation Time :0:00 Categories : Mexican Rice Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 lb chicken breast -- boneless & skinless 2 tablespoons oil 1 can chicken broth 1 8 oz. tomato sauce 1 package taco mix 1 can corn -- drained 1 1/2 cups minute rice cheese chips sour cream Cook and stir chicken in hot oil, until browned. Add broth, tomato sauce, and taco mix seasoning. Bring to a boil. Reduce heat cover and simmer 5 minutes. Add corn. Bring to a full boil. Stir in rice and remove from heat. Cover.
