* Exported from MasterCook * Tarragon Chicken with Mushrooms Recipe By : 365 Ways to Cook Chicken Serving Size : 4 Preparation Time :0:50 Categories : Chicken, Whole, Cut-Up Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 tb Butter 1 lb Mushrooms -- sliced 3 lb Chicken -- cut-up 1/2 ts Salt 1/4 ts Freshly ground black pepper 2 tb Olive oil 1/2 c Dry white wine 1 tb Fresh tarragon chopped -OR- 1 ts Dried tarragon In large frying pan, melt butter over medium heat. Add mushrooms and cook about 5 minutes, until lightly brown. Remove from pan and set aside. Season chicken with salt and pepper. Ina large frying pan, heat olive oil. Add chicken and cook over medium heat until brown, about 5 minutes a side. Drain off excess fat. Add wine and tarragon. Cover, reduce heat, and simmer 25 minutes. Add reserved mushrooms and cook 5 minutes more. Lightly brown. Notes: Instead of whole chicken I like to use thighs and or drumsticks 8 to 10 pieces This dish ages very well and leftovers improve in flavor over 4 or 5 days. - - - - - - - - - - - - - - - - - -
