MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Mango Chicken Thighs With Basil-Coconut Sauce Categories: Poultry, Vegetables, Fruits, Chilies, Citrus Yield: 4 Servings 4 Chicken thighs; - boned, skinned 1/2 ts Salt 1/4 ts Pepper 1 tb Olive oil 3 cl Garlic; minced 1 tb Fresh ginger; minced 13 2/3 oz Can coconut milk 1 md Mango; peeled, chopped 4 Green onions; sliced 1/2 c Fresh basil; thin sliced, - divided 1/4 c Miso paste 2 ts Sriracha chile sauce 2 c Cooked jasmine rice 2 md Limes; quartered Sprinkle chicken with salt and pepper. In a large skillet, heat oil over medium heat. Brown chicken on both sides. Add garlic and ginger; cook 1 minute longer. Stir in coconut milk, mango, green onions, 1/4 cup basil, miso paste, and chili sauce. Cook and stir until sauce is slightly reduced, about 20 minutes. Sprinkle with remaining 3/4 cup basil.
