MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Southwest Smothered Chicken Categories: Poultry, Vegetables, Cheese, Dairy, Chilies Yield: 4 servings 4 Chicken breast halves (6 oz ea); boned, skinned 1/2 ts Ground cumin 1/2 ts Cayenne pepper 1 tb Oil 1 c Corn; fresh or frozen 1 c Salsa 1 c Pepper Jack cheese; shredded 1/4 c Pickled jalapeno slices 1/4 c Sour cream Flatten chicken to 1/2" thickness. Sprinkle both sides with cumin and cayenne. In a large skillet, cook chicken in oil over medium heat until no longer pink, 4-5 minutes on each side. Meanwhile, combine corn and salsa; spoon over chicken. Top with cheese and jalapenos. Cover and cook until heated through and cheese is melted, 3-5 minutes.
