* Exported from MasterCook II * CHICKEN BREASTS PARMESAN Recipe By : The Cook's Book of Uncommon Recipes Serving Size : 6 Preparation Time :0:00 Categories : Chicken & Turkey Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 6 chicken breast halves 1/2 cup all-purpose flour 2 eggs 1 cup dried bread crumbs (fresh will also do) 1 teaspoon salt 1/2 teaspoon onion powder 1/4 teaspoon garlic powder 1/4 teaspoon paprika 1/2 cup chopped onions 1 to 2 crushed cloves of garlic 2 (8-oz) cans of tomato sauce 1/2 teaspoon oregano 1/2 teaspoon basil 1/4 cup olive oil 2/3 cup Parmesan cheese (fresh grated if possible) 8 ounces mozzarella cheese Using a meat mallet flatten each chicken breast into an oval shape. Get out three bowls and put the flour in the first one. Lightly beat the eggs in the second bowl. In the third bowl, combine the bread crumbs with the salt, onion powder, garlic powder and paprika. Dip the flattened chicken breasts first into the flour, then into the beaten eggs, and finally cover well with the seasoned crumbs. Place each prepared chicken breast on a rack and put them in the refrigerator for at least 30 minutes to let the coating set. Prepare the Sauce: Make an italian-seasoned tomato sauce by first lightly sauteing the chopped onion and garlic and then adding the two cans of tomato sauce, the oregano, and basil. Simmer for 20 minutes. Heat the olive oil in a large skillet and saute the chicken breasts until they aregolden brown and then arrange them in a shallow baking dish. Pour the sauce over the chicken breasts, spreading so they are lightly covered with the sauce. Top with the grated parmesan cheese and bake at 350F for 30 minutes. Slice the mozzarella cheese into then slices. Remove the baking dish from the oven and arrange on top of the chicken.
