* Exported from MasterCook * Pork w/Acorn Squash & Onions Recipe By : Serving Size : 4 Preparation Time :0:00 Categories : Main Course - Pork Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 4 lean pork loin or rib chops 1/2" thick -- (about 1 lb.) 1 teaspoon dried sage leaves 1/2 teaspoon salt 1/4 teaspoon pepper 2 garlic cloves -- finely chopped 2 medium onions, cut into -- 1/4 inch slices 1/2 cup chicken broth 1 acorn squash -- (about 1 1/2 lbs.) Trim fat from pork. Cook pork in a 10" nonstick skillet over medium heat, turning once, until brown. In a small bowl, mix together sage, salt, pepper and garlic. Sprinkle half of the sage mixture over pork. Place onions on pork. Pour broth around pork. Cover and simmer for 15 minutes. Cut squash crosswise into 1" slices; remove seeds and fibers. Cut each slice into fourths. Place squash on pork; sprinkle with remaining sage mixture.
