MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Olive Oil Mashed Potatoes With Pancetta Categories: Potatoes, Pork, Vegetables Yield: 8 Servings 3 lb Yukon Gold potatoes; peeled, - diced 3 sl Pancetta or bacon; chopped 1/4 c Olive oil; +1 tb, divided 4 cl Garlic; minced 1/3 c Fresh parsley; minced 1/2 ts Salt 1/2 ts Pepper Place potatoes in a large saucepan and cover with water. Bring to a boil. Reduce heat; cover and simmer until tender, 15 to 20 minutes. Meanwhile, in a large skillet, cook pancetta in 1 tb oil over medium heat until crisp. Add garlic; cook for 1 minute longer. Remove from the heat. Drain potatoes and transfer to a large bowl. Mash potatoes with remaining oil. Stir in the parsley, pancetta mixture, salt, and pepper.
