MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Breaded Pork Tenderloin Categories: Pork, Breads Yield: 4 servings 1 lb Pork tenderloin 1/3 c A-P flour 1/3 c Corn muffin mix 1/2 ts Salt 1/4 ts Pepper 1 lg Egg; beaten 4 tb Oil Ranch or BBQ sauce (optional) Cut pork crosswise into 1/2" slices. In a shallow bowl, mix flour, corn bread mix, salt and pepper. Place egg in a separate shallow bowl. Dip pork in egg, then in flour mixture, patting to help coating adhere. In a large skillet, heat 2 tb oil over medium heat. Add half of the pork; cook 3-4 minutes on each side. Drain on paper towels. Wipe skillet clean; repeat with remaining oil and pork.
