Hayes Categories: Pork, Bacon, Wine, Potatoes, Cheese Yield: 4 Servings 1 1/2 lb Pork loin; bnls, cubed 1 Onion; minced 2 tb Butter 6 oz Dry white wine 4 oz Cream 4 sl Bacon; diced 1 tb Butter 4 Potatoes; boiled, cold, peeled, -sliced 1 cl Garlic 1 tb Parsley Cheese; grated Applesauce Saute pork and onion in butter until brown. Put into a casserole with wine and cream and bake 10 minutes at 400 F. In the frying pan, heat bacon and butter. Add potatoes and saute; when potatoes are hot, crush garlic and parsley together and sprinkle over. Mix. Arrange over pork and return to oven for 30 minutes: 10 minutes before serving, sprinkle with cheese. Serve hot with applesauce.
