MMMMM----- Recipe via Meal-Master (tm) v8.04 Title: Yemen Fatah Categories: Polkadot, Faylen, Lamb, Yummy Yield: 1 Servings 1 tb Oil 1 c Onion (1 lg); heaping, - halved lengthwise, - sliced crosswise 1 cl Garlic; minced 3/4 lb Lean lamb; cut into - thin 2" strips 1/2 c Beef broth 1/4 ts Oregano 1/4 ts Cumin 1/4 ts Coriander 1/8 ts Allspice Salt; to taste (optional) Black pepper; - freshly ground, to taste 1 c Couscous; cooked according - to pkg directions 2 tb Fresh parsley; minced In a medium skillet, heat the oil, and saute the onion and garlic until the onion is translucent. Add the lamb or beef, and saute the meat, stirring it often, just to brown the strips on all sides. Stir in the broth, oregano, cumin, coriander, allspice, salt, and pepper, and cook the mixture a few minutes longer. Serve the meat mixture, sprinkled with parsley, over the hot couscous.
