MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Lamb-Fry Categories: Lamb/mutton, Vegetables, Chilies, Citrus, Herbs Yield: 4 Servings 2 c Onion (350 g); thin sliced 3 tb Oil 1 ts Garlic; minced 1 ts Ginger; minced 1 ts Green serrano chile; minced 3 ts Ground coriander 1/2 ts Ground cumin 1/4 ts Ground cayenne 1/2 ts Ground black pepper 1/16 ts Ground turmeric 1/16 ts Ground cinnamon 1/16 ts Ground cloves 2 tb Water 2 lb Leg of lamb (900 g); - trimmed fat, in 3/4" cubes 1 ts Salt 1/2 ts Fresh lemon juice In a large nonstick frying pan over medium-high heat, fry onion in oil until edges are nicely browned. Add garlic, ginger, and green chile and stir for 1 minute. Mix ground spices with water to form a paste; add to onion mixture. Stir briefly until spices release their fragrance. Add lamb and salt and fry over medium heat, stirring frequently util lamb is cooked through, 10 to 15 minutes. Taste for salt. Stir in lemon juice and remove from heat.
