MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Beef Tenderloin With Chipotle Sweet Potatoes Categories: Beef, Steak, Chilies, Vegetables, Condiments Yield: 2 Servings Sweet Potatoes: 8 oz Sweet potato; peeled, diced 1 tb Butter 2 ts Chipotles in adobo; minced Steaks: 2 Filet mignon steaks (1") - (4 oz ea) 1 1/2 ts Olive oil Cilantro Chimichurri: 1/2 c Fresh cilantro; chopped 2 ts Red wine vinegar 1 ts Olive oil 1 cl Garlic; minced 1/8 ts Salt Cook the sweet potatoes in a a covered saucepan of boiling water 15 to 20 minutes or until tender; drain. Mash. mix in butter and chile peppers. Heat a large skillet over medium-high heat. Add oil; reduce heat to medium. Cook steaks 10 minutes or until medium rare, turning once. Transfer steaks to a platter. Cover with foil; let stand 5 minutes while preparing the cilantro chimichurri. For the chimichurri, stir together the cilantro, vinegar, oil, garlic, and salt in a small bowl. Serve steak with sweet potatoes. Top with the cilantro chimichurri.
